This is its own cut of meat as a steak. It can be ground on demand if requested (for example: Steak Tartare). 

During processing the meat is USDA inspected, then aged for 8-10 days in a temperature controlled refrigeration unit, then cut into steaks and ground, packaged into 1lb vacuum sealed and labeled packages and then frozen. The meat is kept frozen until it reaches its final destination, your kitchen.
